Semolina and water are the only ingredients. They use circular bronze die plates and dry the pasta at temperatures lower than 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta. Spaghettini have a diameter of 1.8mm and a length of 260mm. Their cooking time is between 7 and 9 minutes.
